As dawn breaks over Aguilar, Pangasinan, the community gathers in quiet reverence at St. Joseph the Patriarch Church for Simbang Gabi, a cherished Filipino tradition that celebrates the days leading up to Christmas. For the 11th year, MISTAH Foundation, led by its Founding President, Richard T. Gubatan, continues its annual “Pan de Kape” initiative, which has become an integral part of this sacred event.

From December 16 to 24, the foundation offers free coffee, soup, and bread to early morning churchgoers, adding warmth and hospitality to the Simbang Gabi experience. As participants arrive in the cool pre-dawn hours, they are greeted not only by the familiar sounds of Christmas hymns but also by the inviting aroma of freshly brewed coffee, hot soup, and warm pan de sal. For many, this simple gesture of sharing food and drink has become a treasured part of their holiday season—a comforting reminder of the strength of faith, family, and community.
